You could live on this all season long and not get bored. It changes with what you have on hand and what is coming in at the market. Best of all, you don't have to think. Just put it together.

Grain – couscous is quickest but you can use bulgur, rice, or something more exotic like quinoa or farro.

Onion family - red onion, spring onions, chives, garlic, etc.

Heat - hot peppers of any kind and in any amount to suit you

Protein - nuts, cheese, tofu, tempeh, leftover meat, eggs (omit this if using the salad as a side dish)

Vegetables - whatever is in season, vary the color for the most appeal

Herbs - pick from your garden or pots in your window, fresh is best

Mix together with any dressing.

Note: I got inspired by something I saw on another site and made this recipe card.

A delicious variation on this theme that I made for our first Bible study in the park this summer:
2 cups drained cooked black beans
3 cups cooked brown rice
2 celery stalks, finely chopped
1/4 cup sliced Spanish olives

Dressing: 1 teaspoon ground coriander
2 teaspoons ground cumin
1/2 cup chopped scallions
1-2 tablespoons chopped fresh cilantro
1/2 cup orange juice
1 1/2 tablespoons cider vinegar
3 tablesppons olive oil
2 teaspoons freshly grated orange peel
2 tablespoons chopped fresh parsley
1/2 teaspoon cinnamon
Salt and ground pepper to taste

For a kick, I also added a handful of Greenstar's spicy pumpkin seeds on top.

This looks really good. I will have to try it some time I'll be needing a salad at my next picnic
